HOMEMADE TORTILLAS

One of lifes small pleasures is a fresh home made tortilla, El Burrito helps you to bring this delight into your home.

Knead masa until it is soft and pliable. Pre heat an ungreased griddle or large heavy skillet over medium heat. Shape dough into a ball about 1 1/2 inches in diameter. Line bottom of tortilla press with plastic wrap or sandwich bag. Place more plastic on top of the dough. Flatten ball slightly, close tortilla press firmly and then open. If you are not using a tortilla press, place plastic wrap on a flat surface. Place more plastic on top of dough, and flatten dough with the bottom of a small skillet. If necessary press plastic with your fingers to flatten more.

Open the press and take off top plastic, lift bottom plastic and place dough on other hand. Lift plastic off dough, do not lift the dough off the plastic.

Lay dough flat on hot griddle or skillet, you should hear a slight sizzle, leave for about 15 seconds; the underside should be slightly opaque and speckled, flip and cook the other side for about 30 seconds; this underside should now be opaque and speckled. Flip back on to the first side for 15 more seconds.

If you have done everthing correctly and the griddle is the correct heat, the tortilla should puff up. If the tortilla doesn't puff up, and you wish to make panuchos, press if gently on the last turn with your finger or a towel. Keep moist and warm until serving.
