LUCKY NEW YEAR'S BLACK-EYED PEAS

Number of servings: 4
INGREDIENTS
2 quarts of water
1 pound dried black-eyed peas
12 oz SOYRIZO
1 large onion, chopped
1 green pepper, chopped
4 cloves garlic, minced
1 cup tomatoes, chopped and drained
1 1/2 tablespoons hot red pepper flakes, crushed
1 teaspoon sea salt
1 teaspoon freshly ground pepper
4 cups vegetable broth
4 tablespoons olive oil
3 cups brown rice
chopped green onions to garnish

INSTRUCTIONS
In a large pot, place the black-eyed peas in 2 quarts
water and bring to a boil over high heat. Boil for 1 minute,
then remove the pan from heat, cover tightly and let
stand 1 hour.
Meanwhile, in a skillet, add 2 tablespoons olive oil and
cook SOYRIZO, onion, green pepper and garlic.
Pour off excess fat.
Drain the water from the black-eyed peas.
Place pot back on stove.
Add the peas, sausage mixture, tomatoes, red pepper
flakes, 1 1/2 teaspoons salt and freshly ground pepper.
Bring to a boil, reduce heat and simmer, covered,
for about 1 1/2 hours (until peas are tender).
Meanwhile, in another saucepan, bring the broth,
remaining 2 tablespoons olive oil, and 1/2 teaspoon
salt to a boil. Add the rice. Reduce heat to low and
simmer covered for about 50 minutes or until
rice is tender.
Spread the rice on a deep platter or serving dish.
Pour the pea mixture over the rice.
Garnish with chopped green onion.
