SHEPHERDS PIE

This soy version of this traditional casserole dish is simply scrumptious, and easy too!

SHEPHERD PIE
Number of Servings: 8
Preparation time: 30 minutes + cooking time

INGREDIENTS
16 ounces of NEATLOAF/SOYLOAF
1 medium sweet onion, chopped
1/4 cup beef flavored vegetable broth
1 cup frozen peas
4 carrots, chopped fine and boiled until just soft
2 cups gravy
6 potatoes mashed and seasoned with salt, pepper
and butter
INSTRUCTIONS
Cook onions in olive oil until soft. Add "SOYLOAF"
and vegetable broth and simmer on low for 10 minutes.
Drain broth and put aside to make the gravy.
Place the mixture in an 8" x 11" baking pan.
Top with the cooked carrots and peas.
Pour the hot gravy over the meat and vegetables.
Top with mashed potatoes, dot with butter, or soy margarine.
Bake in preheated 300 degree oven for 60 minutes.
