El Burrito Product Recipes
SOYKNOX & POTATOES
Number of Servings: 2
INGREDIENTS
2 medium red potatoes, cut in 1/4 inch slices
2 tablespoons vegetable oil
2 soy Knox cut into 1-inch pieces
1/3 cup chopped green pepper
1 small onion chopped
1 tablespoon orange juice
2 tablespoons soy sauce
1/2 teaspoon dried basil
1/4 teaspoon salt
black pepper to taste
INSTRUCTIONS
Pour the oil into a heavy skillet on medium high heat.
Add the potatoes, cover and cook until brown and crisp tender -
about 6 minutes. Add the SoyKnox pieces, green pepper
and onion and cook for about 5 minutes stirring as needed.
Mix together the orange juice , soy sauce, basil, salt and
pepper. Add the mixture to the skillet. Cook and stir for
another one to two minutes so that the sauce evenly coats
the Soyknox and potatoes. Serve hot.
