El Burrito Product Recipes

SOYRIZO TORTILLA TORTA

2 - 12 oz pkg. El Burrito SOYRIZO
2 - 16 oz cans fat free refried bean
1 - 8 or 11 oz container El Burrito Guacamole
1/4 cup El Burrito Salsa Verde
1 - cup chopped scallions
1 - 28 oz cans Enchilada Sauce
1 dz. 6 inch corn Tortillas
1 cup grated reduced fat grated cheese,
preferably Jalapeno flavored
Salt and pepper to taste

 

1. Brown SOYRIZO and set aside to cool

2. Pre heat oven to 425º, lightly oil, or coat with non stick spray ,a 13 X 9 baking dish.

3. In a medium bowl, combine beans, guacamole, 1/2 cup scallions, and salsa Verde.

4. Spread enchilada sauce over bottom of prepared pan, cover with layer of tortillas .

5. Spread tortillas with 1/3 bean mixture, sprinkle with 1/3 of SOYRIZO crumbles and
1/3 of the grated cheese.

6. Continue the layering with sauce, tortillas, bean mixture, cheese and SOYRIZO, ending
with the tortillas. Spread top with remaining sauce and sprinkle with remaining cheese
and scallions.

7. Lightly oil a sheet of foil or coat with non stick spray. Place foil, oiled side down, over
tortilla stack. Bake for 20 to 25 minutes, or until heated through. Let stand 5 to 10 minutes
before serving. Top with plain yogurt or sour cream if desired.
