Pan roasted Soyrizo, back beans and corn tacos are sprinkled with lettuce and tomato.
Make sure to squeeze some lime juice for extra bold Mexican flavor.
½ pkg El Burrito Soyrizo or SoyYum Chorizo
1 head romaine lettuce, chopped
1 tomato, chopped
1 can black beans
12 corn tortillas
Limes for garnish
Heat a skillet on medium high heat and cook Soyrizo according to package directions.
Drain and rinse black beans and add to cooked Soyrizo. Stir occasionally and let cook for 2-3 minutes, until beans are warm.
In a skillet on medium heat, warm tortillas.
Cook on one side for 1-2 minutes, flip and cook for 30-60 seconds.
Place about 1/4 c. beans and Soyrizo mixture in each tortilla, top with lettuce & tomato.
Make sure to squeeze some lime juice on each taco for garnish.
